Welcome to Recipe Saturday!

Saturdays this November are dedicated to sharing our International Recipes collection with you. Thank you, supporters of International Christian Fiction Writers blog for celebrating our second blogiversary with us. Please download our recipe collection as our way of saying thanks.

This week we're celebrating Australia! Four of our Australian authors (Rita Galieh, Jo-Anne Berthelsen, Narelle Atkins, and Rita Galieh) have shared these delicious sounding (and, in some cases, looking!) recipes with us: Eggplant Bruschetta, Cranberry Salad, Aussie Beef Rissoles, Kibbeh, Gluten-Free Christmas Cake, Frangipani Pie, Grapes & Yoghurt, and Chocolate Crispy Puffed Rice Treats.

Yum! It was hard to pick just one recipe to feature on the page today, but this recipe won out because: a) I had no idea what it was and b) the contributor provided a beautiful photo!

Kibbeh
Ingredients
  • 2oz (60g) cracked wheat.
  • 16oz (500g) lean minced beef or lamb
  • 1 finely chopped onion
  • 1oz (third of cup) chopped pecans / walnuts
  • Tspn cinnamon
  • Half tspn each ground nutmeg, cloves, black pepper
  • Half tspn salt

Instructions
Cover wheat with water until soaks in. Mix all with hands & press into deep pie dish. Make cut lines & bake 20/25 minutes in a moderate oven. Serve with chopped cucumber, plain yoghurt, mint, pinch of salt, half a finely chopped onion, and Hummus (chickpea paste).

Valerie Comer's life on a small farm in western Canada provides the seed for stories of contemporary inspirational romance.
